Layered Mixed Greens and Stewed Tomato Rice Bake dish

Ingredients

4 cups cooked Riceland Long Grain White Rice
2 sweet onions, sliced
2 tablespoons extra virgin olive oil
1 tablespoon butter
¼ teaspoon sea salt
1/8th teaspoon black pepper
8 ounces mixed baby greens (spinach, kale, arugula blend)
Cooking spray
2 cans (14.5 ounce) stewed tomatoes, drained
2 cups shredded cheddar cheese

Preparation

  1. Spray baking dish with cooking spray and preheat oven to bake 350 degrees.
  2. Over medium heat, sauté onions with olive oil, butter, and sea salt for 10 minutes. Add mixed greens and sauté for 1 minute and remove from heat.
  3. Layer rice, mixed greens, stewed tomatoes, and shredded cheese in baking dish, making sure last layer on top is cheese.
  4. Bake for 20 minutes.
  5. Remove from oven, serve, and enjoy!
